EASY VEGAN BURRITO BOWLS RECIPE
Simple Vegan Burrito Bowls are truly perhaps the best feast of all time! Loaded with dark beans, corn, cilantro lime quinoa, pico de gallo and guacamole. Best part is the majority of these fixings can be found in your storage room! Chipotle doesn't have anything on this.
Ingredients:
Batch of our Cilantro Lime Quinoa
1 (15 oz) can black beans, drained and rinsed
1 (15oz) can corn, drained and rinsed
1 Tablespoon olive oil
1/2 teaspoon chili powder
1/2 teaspoon smoked paprika
pinch of salt and pepper
A jar of salsa or pico de gallo (optional)
Homemade Taco Sauce
Guacamole (optional)
Lime juice (optoinal)
Sour cream and cheese (or vegan alternatives)
Directions:
1. In a skillet over medium heat add olive oil, black beans, corn, chili powder, smoked paprika, salt and pepper. Stir together and sautee for 5-10 minutes, or until mixture is heated through.
2. To construct your bowl, add cilantro lime quinoa, black bean/corn, salsa, guacamole and sour cream (or dairy-free alternative) and any additional toppings you'd like.
