Seared Scallops in Brown Butter

INGREDIENTS

  

1 lb. sea scallops

1/2 teaspoon salt

1/4 teaspoon freshly ground black pepper

1 tablespoon butter

Brown Butter Sauce

3 tablespoons butter

1 clove garlic minced

2 tablespoons fresh lemon juice

1 tablespoon capers drained


INSTRUCTIONS

 

  1. Line a plate with paper towel. Place scallops on the plate and gently pat dry on all sides.
  2. Sprinkle evenly with the salt and freshly ground black pepper. 
  3. In a large non-stick skillet, melt 1 tablespoon butter over high heat. Add scallops to the skillet and sear 2 minutes on each side. Remove scallops from the skillet and keep warm. 
  4. Brown Butter Sauce
  5. Reduce heat to medium high and add 3 tablespoons butter to the skillet with the garlic. Cook for 1-2 minutes or until the butter turns golden brown, being careful not to burn the garlic. 
  6. Turn off the heat and stir in the lemon juice and capers.
  7. Spoon sauce over the scallops and serve with angel hair pasta, if desired.
